How’s this for the best salad ever! It packs a real nutrient punch plus your taste buds will really feel the joy! The taste combo’s between pak choi and pomegranate, beets and raspberries and sprouts and nectarine are INCREDIBLE!!
I love playing with taste combo’s so if something doesn’t appeal switch it with something that you love. The only rule here is to make your taste buds happy!!
In short we’re talking heaven in a salad bowl.
Serves two.
Here’s what you need:
2 heads of pak choi, chopped
1 nectarine, chopped
1 tiny red onion (or a quarter of a big one), chopped
1/2 cup of sprouted legumes (choose your favourites), rinsed
2 tablespoons pomegranate seeds
1 cup cucumber, chopped
2 tablespoons fresh coriander
1 beet, peeled and chopped
1/2 punnet fresh raspberries
A little handful of sunflower, chia and pumpkin seeds
Dressing:
A big glug extra virgin olive oil
A generous squeeze of lime juice
Pinch of chorella
Garlic to taste
Black pepper
Here’s what you do…
:: Couldn’t be easier! Add all the salad ingredients to a salad bowl and ensure that everything is well mixed.
:: Then combine the dressing ingredients (I use a jam jar, and then store what’s left over for next time) and drizzle.
