Cambio De Tercio was founded back in 1995 by Abel Lusa serving Spanish and Basque food in tapas bar style. The team perfected their art and in 2003, the restaurant received the prestigious award " Alimentos de Espana", from the Spanish minister of Agriculture, Food and Fishing, as "The best Spanish restaurant in any country outside Spain." Further awards followed in quick succession including "Best Iberian restaurant in London", "Best Spanish wine list in the U.K" and "Best small owner-managed restaurant in the UK"

It's stated mission is to "bring to the London restaurant scene the finest Spanish products and modern cooking techniques" and on that it certainly seems to have delivered!
