Cocktail making at Goat

A Queen Vic, a Little Tokyo, and a Crackbaby... Chelsea's Goat share their cocktail recipes with us
Cocktail making at Goat picture

Once upon a time 333 Fulham Road was home to a historical pub called The Goat in Boots. It’s now been transformed into Goat, a multi-room venue with a restaurant, bar and secret speakeasy (accessed via a password that changes regularly – oh so hip). Goat have just launched The Old Fashioned Cocktail Club, a series of classes where bartender Steve Manktelow will be teaching how to make perfect cocktails as well as delving into the history of bourbon, gin and other poisons. To give you a taster, Steve has shared the recipes to some of his best-selling cocktails.

Queen Vic
A twist on the Queen Victoria, usually made with vermouth.

40ml Bombay Sapphire gin
25ml Campari
25ml Lillet Blanc
5ml pimento
2 dashes of chocolate bitters

Stir all the ingredients. Make a cocoa rim for the glass by running a slice of orange around the rim, then rolling the rim on cocoa powder. Add ice to the glass and pour the drink over.
Garnish with a chunk of dark chocolate.

Little Tokyo
Plum wine is the key ingredient of this Japanese-inspired cocktail.

50ml Beefeater gin
10ml Umeshu
25ml lime juice
10ml honey syrup
1 tea spoon plum powder Fresh As
1 dash of egg white
3 dashes of Peychaud bitters (anise flavoured)

Add all ingredients to a shaker and shake vigorously for 10 seconds, double strain. Serve in a martini glass.

Crackbaby
This cheekily-named shot is a favourite of royals Wills and Kate, who served them at their pre-wedding bash.

10ml Stolichnaya vodka
10ml passionfruit puree
5ml gomme
5ml Chambord

Add all ingredients to a shaker and shake for 10 seconds, double strain into shot glasses.
Top each shot glass up with prosecco.
