This August, Marylebone will see the opening of the new home of foodie nomads, Shuttlecock Inc, Carousel, a three-story interactive and immersive space, that will play host to Shuttlecock’s (and a number of resident chef’s and pop-up guest’s) unique adventures in flavour, design, performance and music.

To help launch this innovative new foodie project, Shuttlecock Inc will be partnering with both prestigious Argentine chef, Javier Rodríguez (El Papagayo), who will be taking on a month long residency at the ground floor restaurant, and the renowned Art of Dining, who will be running their pop-up downstairs.

Born and raised in Santiago del Estero, Argentina, Javier’s rise to the top of his game can be attributed to three things: creativity, curiosity and itchy feet. His insatiable appetite for travel is central to Javier’s style of cooking, with every stop on his round-the-world trip adding to his eclectic kitchen philosophy: Noma in Copenhagen, Tetsuyas in Sydney, Restaurant Andre in Singapore, Viajante in London, La Gloria in Lima…

Javier arrives in London in August to launch Carousel’s exciting line-up of international residencies, bringing with him a trunkful of ceramic plates, hand-crafted especially for his two week stint, and a unique take on modern Argentine cooking, featuring dishes such as; Rockmelon and Sobrasada, Crispy Leeks and Provolone, Pork Skin, Quince Aioli, Smoked Pimentón and Roasted Pinenuts, Steamed Eggplant, Grilled Anchovies and Lemon Chimichurri on Toast, Cow Fat Bread, Charred Corn Custard, Cock’s Comb Muesli and Chañar Brown Butter.

If he can avoid being kidnapped by one of the capital’s top restaurants, Javier will return home in September to focus on the reopening of El Papagayo in Córdoba.

Meanwhile, The Art of Dining….
Comprises of a chef and set designer. Together they make dining into an art form. Set designer Alice Hodge is an art follower, creator, teacher and collector of tat. She has designed bespoke arrangements for weddings, parties, theatre productions and photo shoots.

Chef Ellen Parr spent her formative years working at Moro and you can taste the Middle Eastern and Spanish influences in her food. She also recently travelled around South East Asia and India researching cooking methods, techniques and flavours.
