This autumn Marleybone’s new home of foodie nomads, Carousel, a three-story interactive and immersive space, will play host to several new unique adventurers in flavour, design, performance and music with notable residencies from the acclaimed Paris Pop Up.

Offering a glimpse into their travels over the past six months through a variety of inspired dishes and diverse beverage pairings, duo Laura Vidal and Harry Cummins formerly of Frenchies Paris, will be creating a menu using local products yet inspired from the various countries they have visited.

Harry Cummins is a British chef with more than 15 years experience in many London restaurants including Jamie Oliver’s Fifteen as well as Michelin-starred Wild Honey, Arbutus and Zafferano. He has just left a three-year term at Parisian hotspot, Frenchie where he was head chef and right hand to celebrated chef/owner Gregory Marchand. Harry’s cooking philosophy resides in the search for good products and relationships with producers to show off their efforts on the plate. He favours a natural approach to cooking with a clear affection for Italian food and a passion for butchery.

Laura Vidal is a Québécoise sommelier who landed in Paris in 2010 having completed her sommelier degree at L’École Hotelière de Laval in Montreal. She also worked at Club Chasse et Pêche and Restaurant Leméac, both Montreal institutions renowned for their excellent service and diversified wine lists.

The menu will be seasonal and constantly change but expect delights such as: Cured Mackerel, Grilled Mackerel Consommé with Fermented Radish and Pomegranate, Duck Breast & Heart, Smoked Hojicha Tea, Bergamot and Raw and Roasted Butternut Squash and Scallop, Pickled Cauliflower with a sauce of Black Garlic Sauce, Squid Ink, and Black Sesame Paste.

Together they are the Paris Pop-Up and look forward to bringing a touch of the gallic, and the global, to Marleybone.
