During Urban Rajah’s four-hour class, he’ll unveil family cooking secrets, which have travelled across three continents and three generations. With recipes taken from his book Urban Rajah’s Curry Memoirs (Headline £15.99) and from his own experiences, by the end of your session you’ll know your Tadka from your Tandoori and your Haldi from your Hing!

What You’ll Learn

· Spice Blending – Here we’ll de-mystify the art of spice blending and explore the various spice notes which are essential in creating authentic Indian dishes. We’ll create your own tailored garam masala and blend it to perfection for you to take home and scent your kitchen.

· Spice Wheel – The Urban Rajah’s handy spice tin will navigate you through the essential ground and whole spices, what goes best with vegetables, fish, fowl and meat.

· Masala Rules – Creating a masala base is key to so many pastes, marinades and sauces. Think of it as the equivalent of an Indian béchamel, roux or rouille. This strand of the Spice Academy canters through versatile masala recipes.

· Rajah Tips – Time saving ideas, pick up some curry recovery tips...how to save gloopy rice, stop yoghurt from splitting when cooking and taming the chilli.

What You’ll Cook

Learn how to prepare a menu fit for a Rajah. You’ll be inspired to tear up your take-away menu and become a spice disciple. We will put into practice the tips and techniques picked up earlier that day and prepare dishes, which span from street food to feasting curries as well as satiating the sweet tooth.

· Street food; Vegetable Pakoras, Channa Chaat (ginger, chilli and chaat flashed chickpeas), Mint & Coriander Dipping Chutney (learn how to make ideal tiffin snacks)

· Curry of the Day; Mustard Masala Salmon (learn how to make a curry paste), Tadka Sabzi (learn how to make a tadka to transform vegetables)

· Something sweet; Mango Lassi (learn how to make the original Indian smoothie)

What you’ll eat; two options here either tuck into what you’ve made and banish the hunger or be sweet and save some for friends and family.

What It’ll Cost

The total 4 hour session including welcome glass of prosecco, ingredients, equipment and guidance, wine specially chosen to match your dishes and recipe sheets will cost £115 and you’ll be in a class of 12.
