Following the successful launch of their first ever ‘Guest Chef’ event, the team at Hotel Xenia in Kensington, London are thrilled to announce details of their next high-profile collaboration for this already popular series of events. This time their street-fronted restaurant Evoluzione will host the talent of Mario Demuro, reflecting his love for the un-sung Italian region of Basilicata.

The second in a series of events will see Demuro explore the culinary delights of this culturally-rich yet underappreciated region, demonstrating just one of the ways that Basilicata’s city of Matera – once considered an Italian exile – has recently stepped forwards into the lime-light to be named ‘European Capital of Culture’ for 2019.

Placing great emphasis on respect for locally sourced, raw ingredients, Chef Demuro will embark on a journey through the ages, presenting a succession of traditional sweet and savoury specialities; all of which will be demonstrated as part of Hotel Xenia’s ‘Chef Theatre’ and paired with a selection of fine wines.

Basilicata-born Mario Demuro’s culinary vision is based around Mediterranean modernity, re-inventing the rurally influenced signature dishes of Basilicata. His heritage is reflected in his cooking, which boasts light, colour, rich flavour and powerful scents, not to mention timeless culture.

Additionally, Demuro will be accompanied by Hotel Xenia’s Michelin Star awarded resident Chef Andrea Angeletti, who as of recent months has been cooking up a storm in this popular borough of London.

Hotel Xenia will be arranging this series of culinary events every 6 weeks, each time inviting a different Italian ‘Guest Chef’ who will expertly take all guest diners on a journey through different Italian regions, tastes and traditions. Confirmed dates and Chefs include:
