This November will see Khmer cuisine take the capital by storm, as Sophat Hing, head chef at Song Saa Private Island, takes the reins at Marylebone’s pioneering culinary hub, Carousel. From 15 - 26 November, Hing will join forces with Carousel’s resident team to host London’s very first pop-up Khmer dining experience, fusing traditional Cambodian flavours with modern techniques.

Hing’s career has taken him through some of Cambodia’s greatest kitchens, but this residency marks his first foray beyond the Cambodian border. The specially designed menu will draw upon traditional Khmer cuisine, traversing the gastronomic landscape from Amok Trey - red snapper curry served in a banana leaf with coconut cream - to the iconic Cha K’dam M’rec Kchey Kampot - wok-fried mud crab with Kampot peppercorns.

Spanning two pristine islands in the remote Koh Rong archipelago, Song Saa Private Island is made up of 27 villas, fusing sustainable design with uncompromising luxury. Song Saa’s culinary vision, under Hing’s guidance, focuses on local and season produce, working in partnership with producers within the local Cambodian community and utilising the kaleidoscopic array of fruits, vegetables, herbs, spices and fish available.
