Recipe :: Plum Pie ...delicious and nutritious!

This pie tastes AMAZing! It's also a good way to incorporate vitamins A, C and E, omega oils, selenium, zinc in a single delicious and nutritious dessert!

Fresh plums are in season right now; greengages, red, yellow plums all work well, and you can substitute your favourite fruit ...enjoy!!

Prep Time: Less than 30 minutes (excluding soaking time) Serves: 8 Ingredients:

First up ...the Filling (start with this because it needs to prepared the night before you want to eat it!)

12 fresh plums 2 lemons, juiced 1 orange, juiced ½ cup dates ½ cup raisins ½ teaspoon ground nutmeg ½ teaspoon ground cinnamon ½ teaspoon ground cloves

Here's what you do...

:: Remove the stones from the plums and slice the fruit in consistently sized slices :: Mix all ingredients, accept the ground cinnamon, cloves and nutmeg in a bowl and leave to soak overnight :: In the morning, squeeze out the juices :: Add the ground cinnamon, cloves and nutmeg and mix well :: Scoop mixture over base and press down lightly

Next up ...the base

2 cups almonds (soaked overnight) 2 tablespoons of pumpkin and sunflower seeds (soaked for an hour) 1 cup dates Zest of 1 orange

Here's what you do...

:: Process in a food processor until the nuts, seeds and dates are fine/smoothe :: Add the orange zest and mix well. :: Press into the bottom of a pie dish

...and last but not least, the Nut Cream

1 cup almonds (soaked overnight) 1 cup dates (best soaked in hot water for 10 minutes) 1½ cups water ½ teaspoon vanilla (to taste) 1 tablespoon pumpkin seeds

Here's what you do...

:: Put all ingredients into a blender and liquidise until smoothe and thick :: Pour over the plums :: Sprinkle with the pumpkin seeds
