This is so yummy ...I love lemon cheesecake, and find it's a really great way of getting the nourishing fix I need without the sugar and fat!
It makes a great breakfast option and the protein, fruit and seed combo will keep you full until lunchtime. It stores well in the fridge too, so if there's some left over it works well as an afternoon snack...
Ingredients:
1 cup your favourite nut, soy or rice milk 2 cups water 2 tbsp vanilla whey protein (optional) 1 banana Half a mango Juice and zest of 1 lemon 2 tablespoon milled flax seeds
Here's what you do...
* Put all the ingredients, with the exception of the flaxseeds into a liquidiser and blend until smooth and creamy. * Pour into a glass and stir in the flax seeds
Tip: Add a pinch of cinnamon for extra spice ...it'll also help keep blood sugar levels stable.
