Imminent expat needs a little advice (work visa)

Hello all-

A little background: I'm a 25-year-old native New Yorker (living in Brooklyn Heights now, the Maida Vale of NYC) and I'm looking for a change of scenery. I've received a job offer with a design outfit in Shoreditch (or thereabouts), and really want to take it. I did the same sort of thing about 5 years ago, living and working in Soho for 5 months, but for the life of me, I can't remember what the process is for obtaining a work permit, registration with the Home Office, etc. I spoke briefly with my potential professional suitor, who mentioned briefly having sponsored one other person for a work visa then continued on, in a slightly whiny tone, about the headaches involved.

A hypothetical (I should preface this by saying that I don't think this will happen): I make arrangements to move to London, my work visa is in order, and sponsorship squared away. When I get to London, my employer decides that it's not worth the trouble and sends me packing. Can I switch my employer after establishing my work visa with said company?

Per my admittedly foggy recollection, I can't apply for a work visa AFTER arriving on a vistor's visa, can I?

Basically no, your visa will be tied to that job I believe.

Search Google for the Home Office, it will have the info.
