The innovative chef who revived forgotten (and controversial) English dishes such as rook pie and grey squirrel pie at Butler’s Wharf Chophouse has moved to Quaglino’s.
Craig James’s new menu (available from August 1) includes interesting twists of classic brasserie dishes, such as roast turbot, mussel and saffron veloute and short rib of beef, braised in white wine, tomato and orange (sadly no pies containing Beatrix Potter characters).
A strong supporter of British produce, Craig James recently won one of the Caterer’s Acorn Awards for the top 30 under 30 in the hospitality industry.
