The restaurant at the Bingham Hotel boasts a stunning riverside location that’s envied by many. The Grade II listed townhouse has a sheltered balcony for alfresco dining and the hotel itself is routinely used for wedding receptions.

Executive Chef Shay Cooper worked at several Michelin-starred restaurants before coming to the Bingham, including the Vineyard in Stockcross and the now defunct Juniper in Altrincham. Cooper favours British cuisine, and says of those who turn their noses up at it need to “get out more”. His favourite dish on the menu is a refined take on the humble chicken soup, served with a crispy egg and a croque monsieur.

He says the greatest challenge of his career has been working at this Richmond hotel. “It’s not only a restaurant but also serves weddings, conferences, functions, afternoon tea and room service. For a 15 bedroom property, it’s quite a busy little place.”

Does he like to cook when he’s off duty? “I usually manage to take Sunday off, so I really enjoy cooking a roast dinner with my family.”
