The All In One Ultimate Restaurant List Interview: Joe Mercer Nairne

One of London’s Top 100 Restaurants 2013

Joe Mercer Nairne and David O’Connor are the team behind Medlar, a British restaurant that was awarded its first Michelin star this year. It’s up nine places from last year, at number 14 on the list.

Getting a Michelin star hasn’t changed the way they operate. “We are always trying to improve so things do of course change, but not because of the star. We are even busier this year than last which may be a result of the star though.”

Of the London restaurant scene he says “it’s fantastic. I try to eat out as often as I can, at new restaurants and old favourites. These outings are more limited now with a business, two young children and a third on the way, but I still do pretty well! London has a great deal to offer.”

Nairne’s kitchen philosophy is to cook what he likes to eat and be generous with it, however at home he sticks to cooking fish as his wife doesn’t eat meat.
