Marcus Wareing at the Berkeley topped our very first All In One Ultimate Restaurant List in 2011. His restaurant at this exclusive hotel is the ultimate in fine dining, serving food of the highest quality in luxurious surroundings. Wareing also runs the Gilbert Scott, at the opulent St Pancras Renaissance Hotel.

Wareing believes there are misconceptions to being a chef. “There is a level of reality in the kitchen that definitely isn't reflected accurately in the media or in television.”

He doesn’t get bogged down with food trends. “If I knew what they were exactly I would be looking to do them myself!”

What advice would he give to chefs starting out? “Be loyal - it is a small industry we work in and so it is important to ensure you are loyal from day one to your employer.

He likes eating at Bar Boulud with his entire family, and going to Scott’s with his wife Jane.
