Masaki Sugisaki worked at Nobu on Berkeley Street before joining Dinings as partner and Executive Chef in 2008. This Marylebone restaurant, which has a sushi counter on the ground floor and a tiny dining room in the basement, serves tapas-sized portions of modern Japanese food.

Having begun his career at his parents’ kaiseki restaurant, in the mid-90s Sugisaki travelled to London to learn how Japanese food was represented outside of its homeland. His menus at Dinings frequently use many western ingredients alongside Japanese ones.

At home he prefers cooking British food, in the kitchen he can’t survive without his set of Japanese knives, and when eating out he favours casual eateries over fine dining establishments.
