Pitt Cue Co started life as a food truck two years ago. Their take on pulled pork, ribs and slow-cooked beef was so successful they regularly had long queues waiting outside their van by the Hungerford Bridge on the South Bank. In 2012 they opened a permanent restaurant in Soho, and the crowds followed. They’re new on our list, straight in at number 10, the highest entry this year.

“Luck has had a big part to play in it” says owner Tom Adams about the last few years. “Meeting certain key people at the perfect time. We didn't have any experience in running a restaurant, so hard work was key. Working 100 hour weeks isn't healthy but was important for us to get to grips with all aspects of the restaurant. Also, from a food point of view, trying to keep it simple and focusing on a brilliant supply chain has had a lot to do with why we're still very busy. “

Adams hates kiwis, and his favourite places to eat are Barrafina and St. John Bread and Wine. Will Pitt Cue Co expand in the future? “At the moment I’m just focusing on our farm, trying to produce the best pork we can for the restaurant.”
