Sartoria Head Chef Lukas Pfaff becomes a Member of Slow Food UK’s Prestigious Chef Alliance

Joins other prestigious restaurants in London

This October, Sartoria head chef Lukas Pfaff was announced as a new member of Slow Food UK’s renowned Chef Alliance, and as such, he has added several ‘Forgotten Food’ dishes to his luxurious Italian menu.

Joining other prestigious restaurants in London including Locanda Locatelli, Murano and Benares, Sartoria will now serve a selection of delicious dishes using ‘Forgotten Food’ ingredients including Morecambe Bay Shrimp, Middle White Pig and Kentish Cobnuts, all of which are threatened by industrial agriculture and are part of Britain’s regional food heritage that Slow Food UK protects.

Head chef Lukas Pfaff comments on his new membership with the Slow Food Chef Alliance: 'Becoming part of the Slow Food Chef Alliance was important to me as I believe in supporting small-scale producers and promoting the use of sustainable, seasonal ingredients in my cooking. Slow Food celebrates taste, tradition and seasonality, all of which I personally promote, so it seemed like a natural step.'

Dishes will include Morecambe Bay Shrimps with a courgette and citrus tartare; Middle White Pig, nose-to-tail, cooked three ways with black cabbage; and Cocoa and almond pudding with Kentish Cobnuts. All seasonal ‘Forgotten Food’ dishes will be available throughout November, marked by the Slow Food Alliance symbol to highlight each traditionally British ingredient.

Sartoria will also be donating £1 to Slow Food UK for every ‘forgotten food’ dish ordered throughout the month – a delicious way to support a great cause.
