Chinese food that could turn any doubter
The food of northern China is decidedly spicy and we probably should have guessed that a dish of dried chilli, garlic and chicken from the ample menu would have a kick. However, along with the slow rising heat that has us dabbing beads away with the nearest napkin, there is so much flavour to savour in this type of cooking that it’s impossible not to push back against the spice. Wow… that’s it, the dried red chilli and chicken is phenomenal and the green beans with pork are a worthy sidekick with their sweet freshness supported by sticky, saltiness. We lose our composure when people tell us that they don’t like Chinese food, but perhaps we should just calm ourselves and direct them here. If you can deny the brilliance of Bai Wei then fair enough, it’s just not for you.
