Ash Mair, the 2011 winner of MasterChef: The Professionals is Head Chef of the first UK outpost of Bilbao Berria, a Basque restaurant that already counts several branches in Spain. The restaurant has Pintxos (which are a skewered combination of ingredients to be eaten in one or two bites without cutlery) as its trademark offering, but also serves up a beautifully crafted menu of Spanish and Basque cuisine in true Ash style.
