Where: Silo
A new breed of restaurant has been emerging in the last few years in a bid to become sustainable. These may use products that would otherwise have gone to waste in their dishes, grow their own produce and use recyled materials on their premises. Silo in Hackney is one of these, boasting its own flour mill and traditional bread-making techniques and its own fermentation process for drinks, as well as tables and plates made from reconstituted food packaging and plastic bags respectively.
The menu is modern British and European, and you'll find things like fine beans with Parmesan rind and its 'Siloaf' bread.
