Spearheading the drink's renaissance is Vermuteria, a bodega-style all-day bar and cafe serving Mediterranean small plates and stocking 50 varieties of vermouth. It's the brainchild of Anthony Demetre, formerly the chef of Soho's Arbutus and Mayfair's Wild Honey, where he frequently infused his own vermouths.
