Following the huge success of their interactive supper club POP-Down, bespoke dining company Cuisson will be taking their innovative and highly creative pop-up to the Vaults in Waterloo, for a three-month residency, from 20th October until the 16th January 2016.
As a venue, the spacious layout and unadorned décor of The Vaults gives it the perfect versatility that an interactive pop-up such as Cuisson requires, and the area has recently become identified as Waterloo’s subterranean hub of arts and culture. With two floors accommodating a total of 75 diners and a late night bar license until 2am, POP- Down’s residency will offer delicious lunches, experimental dinners and innovative cocktails. Keeping in line with the interactive focus of POP-Down, chefs will plate up dishes in the centre of the room, inviting guests to join in and help garnish and customise their dinners.
The menu at POP-Down has been specially designed by one of Cuisson’s top chef’s, Chavdar Todorov, who has perfected four dishes of highly creative and exclusive recipes for the residency, with menus incorporating the best of Autumn and Winter produce and finally some of Cuisson’s ‘Best Bits’. Keeping in line with the much-loved and distinctive creativity of POP-Down, there will also be some special surprises thrown in to the equation, creating a sense of wonderment throughout the experience.

Cured mackerel, lovage emulsion, daikon, horseradish snow
Slow cooked brisket, fermented vegetables, 'Pick and mix' garnish
Carrot cake, coconut custard, brown butter brittle
More interactive than ever before, with each course exploring an array of astonishing flavours and textures sure stimulate the senses, POP-Down at The Vaults will offer guests a one of the kind dining experience that they’ll never forget. With dishes that are not as they seem, and extraordinary surprises throughout, this supper club will have guests leaving with their stomachs sated and their minds exhilarated.
