The Demo Kitchen comes back with a bang, with two fantastic guests in two days

The Demo Kitchen comes back with a bang at the end of March, with two truly delectable spreads from food writer and former River Cottage chef Tim Maddams, and Emily Watkins, chef-proprietor of the acclaimed Kingham Plough in Oxfordshire. On Thursday 30th March, Tim will be focusing on the joys of pre-asparagus springtime, when your body is crying out for fresh greens but those verdant tender spears are yet to venture out. “The wild larder fills in that hungry gap in the foodie calendar,” he explains—and will demonstrate this via a vibrant menu of rabbit, lentils and parsley, grilled squid and chermoula, a three-cornered leek rarebit, and rhubarb with ice cream.

The following day, Friday 31st March, Emily will take the helm of the demo kitchen with three rich, dazzling wellingtons, recipes for which featured in Market Life magazine: salmon wellington with horseradish cream, pork and black pudding wellington, and carrot and beetroot wellington with goat’s curd.
