Borough Market is holding a series of cooking demonstrations on Thursdays throughout August in its Market Hall Demonstration Kitchen to celebrate the influence that the cultural heritage of some of the UK’s most innovative chefs has had on their cooking.

The theme of ‘Migration of Taste’ celebrates Borough Market’s status as an International Market, and the cooking demonstrations will explore how cultural references from different cuisines can be combined with British influences. Some chefs may choose to replicate dishes passed down through their family, continuing the traditions from their homeland, others will create a fusion between recipes from their native country and where they now choose to live.

Visitors to the Market can head to the iconic glass structure of the Market Hall and get culinary inspiration from Asia, Africa, Europe, Central America and the Middle East. Using unusual ingredients from their birth countries and seasonal ingredients from traders at Borough Market, the chefs will prepare a range of recipes in front of the audience. Recipe cards will be available to take away, enabling visitors to buy the necessary ingredients from traders in the Market and recreate the dishes at home.

No cooking demonstration would be complete without a tasting, and visitors will be able to sample the delicious dishes after watching them being cooked.

The free ‘Migration of Taste’ Cooking Demonstrations will take place in the Demo Kitchen, Market Hall, Borough Market every Thursday throughout August from 1pm – 2.30 pm.

2nd August: Acclaimed food writer and chef Ursula Ferrigno trained at the Auguste Escoffier School of the Culinary Arts?and has taught at leading cookery schools in both Italy and the UK. Ursula learned to cook as a child by assisting her grandmother preparing the traditional family dishes and returns regularly to Italy, to visit family and to teach cookery. She embodies the Italian and Mediterranean passion for good food made from the freshest natural ingredients.

9th August: Born in Penang, Malaysia, Norman Musa moved to the United Kingdom in 1994. He opened up his first restaurant in Manchester in 2006 and is currently active teaching Malaysian cuisine at top cookery schools in UK, whilst collaborating with established restaurants in European cities. Norman will be showcasing a range of traditional and contemporary Malaysian dishes.

16th August: Masterchef winner Dhruv Baker will be exploring influences from his Mexican food heritage. Dhruv’s jetset early life began in Mexico, where he lived for five years before moving to India for ten years, then East Africa and Spain before moving back to Mexico. By merging the culinary techniques and heritage of European cuisine with the exciting flavours of Central America he hopes to inspire Borough Market shoppers to experiment.

23rd August: as an English-Irish-Iraqi, Philip Juma has been influenced by both Middle Eastern and modern European cuisine throughout his upbringing and this is reflected throughout his style of cooking today. Philip has taken his experiences from London’s contemporary restaurant scene to translate traditional dishes using modern cooking techniques and Michelin flair, while always staying true to the food’s Iraqi heritage.

30th August: Zoe Adjonyah deepened her understanding of West African cuisine after a trip to visit her extended family in Ghana. She spent time exploring recipes in her grandmother’s kitchen and at the famous Kaneshi street market, where she met with cooks who shared their own takes on traditional recipes. Zoe will take visitors to Borough Market on a food journey, introducing African flavours which can be enjoyed at home.
