BUDGIE MONTOYA HITS THE PANS AT ORANJ

Bringing a taste of coal-fire, Filipino cooking to the pans, Oranj is delighted to welcome Budgie Montoya, the chef and founder of London’s famed Sarap. Available until 18th February, Budgie will be showcasing his playful approach to Filipino flavours combining sweet, sour and salty notes. Much loved classics including Sarap’s Fried Chicken, perfectly crispy chicken wing served alongside banana ketchup will be available alongside this, there will be new dishes including Trout Kinilaw, cured ikejime ocean trout, served in a tropical coconut dressing finished with a touch of calamansi lime, Poussin Inasal, whole baked poussin in a sauce of lemongrass and peppery annatto butter alongside sides such as Kale Laing, dark green kale braised in a sweet and fiery reduction of coconut milk and chilli.


The menu has been carefully paired by the team at Oranj with cocktails including Plum Negroni, Smoke Tea Old Fashioned and Spicy Margaritas. Wines will include a pleasingly rich, oaky Bock, Ne Fais Pas Sans Blanc 2021 ), alongside Babar Is The Colour offering a dark pink glass with notes of cherry and strawberry, just to name a few.
