This smoothie makes a great breakfast option and the nut, fruit and seed combo will keep you full until lunchtime. It stores well in the fridge too, so if there's some left over it works well as an afternoon snack...
Ingredients:
1 cup cashew nuts
2 cups water
1 banana
3 heaped tablespoons mixed berries
1 tablespoon milled flax seeds
Here's what you do...
* Soak the cashew nuts for a minimum of 2 hours
* Put the nuts and water into a liquidiser and blend until smooth and creamy.
* Add the fruits and blend until smooth.
* Pour into a glass and stir in the flax seeds
Tip: Add a pinch of cinnamon for extra spice ...it'll also help keep blood sugar levels stable.
