Founded by Roberto Costa, Macellaio currently has two restaurants in London, located in Exmouth Market and South Kensington, that showcase the best produce from Italy with an emphasis on beef and tuna. Passionate about serving the best ingredients from his native homeland, Roberto’s ethos, or Metodo Costa, is simple: choose the freshest produce and cook simply to let the natural flavours shine through. Cooked at a very high temperature, ensuring the inner parts are kept moist and juicy, the meat is cooked in its own juices with rock salt and Ligurian olive oil that serves to enhance the distinctive flavour of the meats.
