Indian food is a discriminating palate that can instantly pick the substitution of turmeric for the pricier saffron in "saffron rice". There are very few people who do scratch cooking - look at a recipe and start from scratch. Or if they do, they finish it off with a dollop of our paste, because that rounds everything off.
