Michelin-starred Chapter One is Kent’s best restaurant, and would be equally revered if it was based in central London. Head Chef Andrew McLeish has worked here since 2000.

“I enjoy cooking for anybody that enjoys food. I get a real buzz seeing people enjoy the food and the experience.

My pet hate (food-wise) are products that are out of season. My guilty pleasure are Hob Nob biscuits.

The person I have learnt the most from in my career is Nico Ladenis, as he is a master of flavour.

For my last meal, I would spend a day shooting grouse, then eat pot roast grouse with a nice bottle of wine, perfect.”
