Brand-new restaurant, Hot Stone in Fitzrovia, will officially open its doors on 19th May. Bringing the refined sushi, sashimi and signature hot stone cookery loved by patrons of its first restaurant on Islington’s Chapel Market to Windmill Street, tables are already in high demand.

The menu has been designed by Executive Chef Padam Raj Rai and showcases a deep-rooted commitment to exquisite and elevated modern Japanese cuisine, while also paying homage to traditional and regional cookery.

With two decades of experience in some of the city’s most prestigious Japanese restaurants including Tsukiji, Nobu and Zuma, Chef Padam has created a menu for Fitzrovia that is bursting with fresh and beautiful produce including ingredients sourced from Japan and rarely seen in the UK. As well as being one of only eight restaurants in the UK to serve certified Kobe beef, diners can expect freshly grated wasabi; Sanpuku, the finest nori sourced from Japan’s Ariake Sea; Koshihikari sushi rice and aged soy sauce.

All the restaurant’s delicate dishes are made to order and exquisitely presented in either smart wooden boxes or on beautiful Japanese ceramic bowls and plates. Star of the show is Hot Stone’s signature Ishiyaki menu, an ancient form of Japanese cookery using searing-hot stones crafted out of volcanic rock. Brought straight to the table, diners can sear premium cuts of Kobe and A5 Wagyu to taste, alongside succulent black tiger prawns and the freshest catch of the day.

Not for nothing is Hot Stone renowned in the city for its sushi and sashimi – unrivalled and made fresh to order at the dedicated sushi bar, choices range from razer-sharp maki rolls of Japanese Yellow tail with mango salsa or Wagyu sukiyaki, to signature sashimi cuts of seared butterfish with truffle spicy ponzu and fatty tuna with red jalapeno. Finish with homemade green tea matcha cheesecake, or a selection of Mochi.

To complement the menu, Hot Stone offers sake by the glass, bottle and tasting flight, alongside a concise and carefully thought-out list of wines from France, Italy and Spain. There is also a range of Japanese spirits, including Ryoma seven-year-old rum, Nikka Coffey gin and a number of Suntory whiskies, as well as Sapporo and Kirin beer.

Inspired by the characteristic minimalism of Japanese design, the contemporary interior features traditional pale wooden paneling, accent sage green tiling, warm grey paintwork and a beautiful artwork mural by 18th century Japanese ukiyo-e painter Hokusai Katsushika.
