In Parma is a charming, rustic Italian restaurant tucked away in the foodie haven of Fitzrovia. It is unique on the culinary scene for its firm emphasis on the geographical origin of the foods it serves. All ingredients must have been awarded the European PDO (Protected Designation of Origin) or PGI (Protected Geographical Indication) label, indicating their authenticity and incredible quality.
In Parma brings this unique sensibility to a wine tasting event on 19th November, with a healthy dose of entertaining competition thrown in. Sommelier Federico Bruschetta has selected six wines, each stemming solely from the Sangiovese grape and exclusively from wineries in the regions of either Tuscany or Romagna, to be paired off against each other in a bid for excellence when matched with new head chef Fabrizio de Lisi’s creations. Chiantis, Sangiovese Romagnas and Rossos are matched accordingly with an Italian risotto, tender pork fillets with a creamy mushroom sauce, and heavenly baked potatoes with gorgonzola cheese.
