Summer Berry Crumble

So this is one of those desserts I hit upon, mid-week when I felt like I should be working but somehow couldn't concentrate because I was craving something sweet!

It was a little bit random, but it came together beautifully, and it's a total keeper ...infact I had it again today, and hey, it's full of all natural ingredients, so I don't need to make excuses or feel guilty, because it's dairy, sugar, gluten, soy and guilt-free!


Actually fat-free too, well almost ...none of the nasty saturated fats anyway, just the good omega oils in the flaxseeds!

Here's what you need:

1 cup mixed berries and cherries

1 160ml can of coconut cream

¼ cup water

1 tablespoon sweetener of choice ...I used coconut palm sugar, but pick your favourite

4 tablespoons ground flax seed

Here's what you do...

:: Combine the sweetener with the coconut cream (I put mine in a blender to break the coconut palm sugar down ...but if I was using eg, maple syrup, I'd just mix with a spoon for less washing up!)

:: Put the berries in a serving dish

:: Pour the coconut cream over them

:: Sprinkle with the flax seeds

That's it! Seriously ...now taste it, isn't it amazing!

And, how good is it for satisfying food cravings in a totally nourishing and satisfying way? Who needs refined sugar, carbs and fat?!

Nourishing. Healing. Balance.

...way better than dairy or soy yoghurt, and so much better than any of the overpriced coconut yoghurts on the health food store shelves at the mo'!
