Meat lovers rejoice – Borough Market traders Cannon & Cannon has launched its new Meat School.

The courses at the Meat School aim to raise the profile of the Great British artisanal cured meat scene, offering customers the chance to gain a fuller understanding of the art of producing high quality cured meats.

A number of workshops are on offer, from Meat and Wine Pairing tasting events to half-day hands-on courses such as Make Your Own Bacon. Participants will be greeted with a bacon sandwich before having the opportunity to sample a variety of different types of bacon and getting top butchery masterclasses on curing bacon at home.

Borough Market has always believed in the value and importance of onsite production. Cannon & Cannon - like many of Borough Market’s traders – possess an intimate knowledge of the produce they sell in order to maintain the highest standards.

Andrew Sharp, from Cannon & Cannon, said: “We work with some incredible producers and we are lucky enough to see and taste their brilliant produce every day. We want our customers and a wider audience to experience this: to get more exposure to British cured meats and understand where the products come from and how they are made – from farm to fork.”

Keith Davies from Borough Market said, “The variety of courses on offer will be an exciting development for Borough regulars – who value the provenance, quality and high standard of the food – as well as drawing in newcomers to the market. Meat School is a great opportunity to feed curiosity and further people’s knowledge and understanding of British meat.”

Cannon & Cannon’s Meat School is taking place at Borough Market with classes every week throughout summer, so there’s plenty of time to learn some new tricks to impress summer guests in the height of barbecue season.

A handful of experienced tutors will lead the courses, with prices starting from £15 for the tasting events and from £25 for the hands-on courses.
