For five nights from tomorrow, Monday 26th to Friday 30th July, the people behind the flour with the power to save the world, Wildfarmed, will be taking over Silas Yard in Bethnal Green for a week-long residency to highlight how food really can fix the planet.


Thomas Straker, Chantelle Nicholson, Gaia Enria and Mitchell Damota, Will Lewis, and Chris Roberts are just a handful of talented chefs and bakers discovering the wonders of soil and regenerative farming practices to not only help reverse climate change, but to get more nutrition and flavour onto our plates.


Our most complex problems have the simplest solution: fix food, fix the planet. Wheat is one of the most common ingredients in the western diet and also one of the most intensively farmed crops, damaging our soils at an alarming rate. Wildfarmed is on a mission to turn things around and get as much wheat coming from thriving ecosystems as possible, so that every loaf of bread, slice of pizza, and every bowl of pasta can make a difference.


These talented chefs are making it all the more easy for you to do right by the planet, and will be bringing their incredible Wildfarmed creations to the table:


MONDAY 26 JULY - Thomas Straker (pictured)
Following his sell out 'RIGHT THEN' Residency at Carousel, MOB Kitchen's Thomas Straker is going to be kicking the week off serving up Focaccia with Rosemary & Olive Oil and Tagliolini with Artichokes, Parsley, Lemon and Parmesan.



TUESDAY 27 JULY - Chantelle Nicholson
Chantelle Nicholson, founder of Tredwell's and All's Well will be cooking Courgette & herb Fritters with Miso Aioli, Slow Cooked Lamb Belly, Kimchi & Cheese Toastie (Kimchi, Cashew Butter & Coriander Toastie for the veggies) and Smacked Cucumbers.


WEDNESDAY 28 JULY - Burro e Salvia
One of Wildfarmed’s longest supporters and cult pasta favourite, Burro e Salvia will be offering up Wholemeal Orecchiette pasta with rich Sausage Ragu for the meat eaters – and a vegetarian option of Wholemeal Tortelli of Parmigiano Reggiano, Butter & Summer Truffle.


THURSDAY 29 JULY - Willy’s Pies
Thursday will see the man responsible for re-writing the pie game take over the reins, lockdown phenomenon Willy’s Pies will be serving up Braised Lamb Shoulder Pie or Goat’s Curd Pea N’ Mint Pasty with Labneh, Za’atar.


FRIDAY 30 JULY - Flamebaster
To close the week, the ultimate grill master Chris Roberts a.k.a Flamebaster, will be filling Laver Flatbreads with Juniper smoked Snowdonia Mountain Lamb, Flamebasted Lamb Fat & Pickles. Veggies will be treated to Fruits of the woods & sea veg empanadas, Charred salsa criolla.


 
Each night the creators of everyone’s favourite Ice Cream Sandwich, Happy Endings, will be serving up a bespoke flavour sandwich to go with each chef’s menu. Each flavour is for one night only and will be made with a Wildfarmed biscuit.
