It’s said that the father of medicine, Hippocrates, built his hospital near a river so that he would be able to have plenty of fresh watercress to use in treatments. During the 1800′s, watercress was an essential part of the working class diet. Today, watercress is found on high street supermarkets and recognised as a super food.

❤ ❤ ❤ this delicious and nutritious, nourishing soup. It’s quick and easy to make, freezes well, and the potatoes give it a hearty wholesome feel so you’ll feel deliciously full after a bowl …no bread required.

Prep time: 10 minutes
Cooking time: 25 minutes
Serves: 4

Here's what you need:

1 small onion, finely chopped
Olive oil
2½ pints of your stock of choice
2 small potatoes, coarsely chopped
3 bunches of watercress, chopped
2 tsp fine herbs
Pepper to taste

Here's what you do...

:: Gently heat the olive oil over a low heat

:: Add the onion and gently cook until golden brown

:: Add the stock to pan along with the chopped potatoes

:: Bring to the boil and simmer until the potatoes are cooked, then remove most of them

:: Add the watercress to the pan and simmer for a further to minutes …if you’re using the stalk too, give them a head start on cooking time, by putting them in first and gently bringing to boil, before reducing the heat and adding the leaves.

:: Pour ingredients into a liquidiser jug and blend until smoothe.

If you place the bowl of soup in a larger bowl of ice-cold water, then it retains a vibrant green colour for longer…

Great for breakfast, lunch and dinner! …and it’s good either hot or cold too.
