There's no stopping the Meat empire - from selling burgers out of the Meatwagon in a Peckham car park to a trendy pop-up above Goldsmiths University students' favourite pub, to a now rapidly expanding chain throughout the UK and beyond. It's little wonder MeatLiquor, their large outpost near Bond Street, has made it onto our Ultimate Restaurant List at number 23. We fired our quick round of Q&As at co-founder Yianni Papoutsis.

What does MeatLiquor do that nowhere else does?
We provide an adult playground for greasy, guilty pleasures.

How has your menu evolved in the time you’ve been open?
It evolves constantly. Every site has dishes unique to them, we’ve just introduced Sambal Wings & Sambal Fries to our UK menus from our Singapore outpost.

Which new London restaurants have excited you recently?
Primeur in Newington Green. A secret(ish) gem with a great selection of wines.

Who have you learnt the most from in your career?
My customers.

What would your last meal be?
Either Steak & Lobster or really good dim sum from a trolley.
