After almost 10 years of service, the flagship closed its doors this July to undergo a full transformation reopening on 9th September 2022 to reveal a sleek, contemporary new look.

Chotto Matte landed in 2013, with founder Kurt Zdesar bringing the vibrant spirit of Tokyo and the taste of Lima to the heart of Soho. It soon became a staple on London’s restaurant scene, mirroring its eclectic environment and continuously seeking creative influence through art and diversity.
The reimagined restaurant will debut a stylish lounge bar, as well new menu additions, reworked cocktails and more. The stunning re-design will engulf the totality of Chotto Matte’s furniture from floor to chairs and tables to ceilings, featuring hues of green, purple, and orange.

Tropical foliage will also be abundant throughout the restaurant, as a nod to the Peruvian landscape. All the brand’s most iconic features will still be found within the new design, including Japanese lava stone, shou sugi ban wood, and a variation of wall art inspired by Tokyo’s contemporary urban culture.

Guests will still enjoy the theatrics of the sushi counter and upstairs open kitchen, complete with a new updated robata grill.

The Chotto Matte concept is set for a global expansion journey, bringing its signature Nikkei experience to various aspirational cities across the US and beyond. Confirmed upcoming sites include the likes of San Francisco, Los Angeles, Nashville and Philadelphia, in addition to Manchester in the UK, Doha and Riyadh in the Middle East.

Current sites include the Soho flagship, newly opened Marylebone branch in London, alongside Miami and Toronto.

Soho’s new look will offer an insight into an elevated design direction and a preview of what’s yet to come. The unique concept seamlessly adapts to each of its locations, while the unmistakable essence of the brand remains at the forefront.

The site has been designed by award-winning architect and long-standing brand partner Andy Martin Architecture (AMA).

"We are always looking to innovate and evolve, from kitchen to design, so after almost 10 years of service it was time to shake things up. Since day one art has been an important feature in all our designs, with graffiti walls and neon artworks. Now we are taking it further and implementing it in every aspect of the restaurant. From ceiling structure to the furniture color palette and shapes, the Soho flagship will be a sneak peek into our future restaurants. The star dishes of the Soho branch include the likes of Yellowtail “Nikkei Sashimi” with jalapeño, coriander and yuzu truffle soy, Wagyu Sirloin with Truffle Teriyaki sauce and Black Cod Aji Miso with Chilli miso marinade, yuzu, and chives.

Global Executive Chef Jordan Sclare is currently working on adding new surprise items to the menu to complement the classics, including the introduction of a new bottomless Nikkei Brunch for Saturday goers.
Sclare has played a fundamental role in the creation of Chotto Matte’s culinary identity. He continues to push the boundaries and vision of Nikkei cuisine, drawing on classic Japanese cooking techniques and expertly applying them to Peruvian ingredients.

Also launching for the reopening, the brand new Tokyo to Lima cocktail menu. Global Bar Manager Gabor Fodor has been working on the project which is set to roll out globally across all Chotto Matte restaurants this Summer, after a successful initial launch in Marylebone.
Each of the creations push the boundaries by mixing premium spirits with signature ingredients from the kitchen which are surprising and uncommonly found in cocktails, including coriander, teriyaki, miso, and black pepper.

The process has been both educational and rewarding, and I can’t wait for Chotto guests, old and new, to experience what we’ve created. My team and I look forward to serving up a little enchantment in every sip, alongside a truly unforgettable service’.
In addition to the new Tokyo to Lima menu, the Frith Street exclusive cocktails have been entirely reimagined, and an exclusive Chotto Matte Pale Ale has been added to the menu.
