Where do you source your ingredients?
We are trying to source sustainable British ingredients as much as we can to help local economy and give our customers a vast array of different foods to experience.

Which are your favourite London restaurants?
River Café.

What is your favourite food to experiment with?
I love to experiment with British or European ingredients which we do not normally use in traditional Japanese cuisine.

Can you name a food that you regard as a guilty pleasure?
Hot wings from KFC.

Is there an ingredient you hate using?
Artificially made food.

What do you think restaurant trends will be for the year ahead?
There will be lots of newcomers with different concepts, and experimental food. Small restaurants or cafes with new ideas and high quality food with organic ingredients.

What has your most valuable experience as a chef been?
When customers get crazy about my own creations.
