Where: Bufle
It sounds like one of those confectionery puns chefs and their press people have come up with, like the cronut and the cragel. However the bufle - composed of the words "bubble" and "waffle" is in fact a typical food in Hong Kong, made from a light batter that's fried just enough for its distinctive bubbles to appear. When restaurant and bar Bufle in Soho opens in August they will be preparing them fresh to order, wrapped in cones, and topped with ice cream, fruits, cereals and sweets. Could the bufle be the next culinary trend to rival Dominique Ansel's famous bakery in New York?
