Eat at the restaurant that sinks into the ground

A Mediterranean villa if you crossed it with a UFO
This must try is connected to: Vardo Chelsea

As jaw-dropping architecture goes, it's been a while since a building made as big an impression on us as Vardo, the restaurant by coffee experts Caravan. Located on Chelsea's Duke of York Square (where the Saatchi Gallery is), it's a three story circular construction that resembles a Mediterranean villa if you crossed it with a UFO.

But best of all are the windows - huge and floor-to-ceiling, circling the whole structure, they sink entirely into the ground at the flick of a switch, transforming the restaurant into an alfresco eatery. We'd go for a demo of this alone but the food is appealing too, with an international menu that includes dishes like za'atar baked cod, bone marrow and scamorza pizza, and steamed mussels with n'duja.
