Always wondered what cooking recipes from a world renowned Michelin starred chef would be like? If the answer is yes, then come and immerse yourself in all things ‘Roux’ at the Cooking The Roux Way - Shellfish and Champagne Experience at Cactus Kitchens on Tuesday 13th August.

Designed by Michel Roux Jr and hosted by Chris King, Chef de Cuisine at Roux at the Landau at the Langham London Hotel and protégé of Michel Roux Jr, you’ll learn to shuck, shell and sear a variety of shellfish from crabs, to razor clams and scallops, in this expertly curated, hands on session.

This six hour learning session offers a unique insight into the cooking ethos of the legendary Roux family where you’ll not only learn the secrets, tips and classic techniques involved in creating beautiful modern dishes but also get the chance to delve into the incredible family archive and have a go at cooking some of the exquisite recipes that made the family famous.

Learn to master recipes including razor clams, chorizo and seashore vegetables and seared scallops served with a spiced pepper coulis and shaved fennel, before you enjoy your dishes over a lunch hosted by Chris King, with each dish expertly paired with Champagne specially selected by Silvano Giraldin, the Director of La Gavroche.
