The acclaimed Wild Game Co. will launch a monthly pop-up dining eve this summer, in collaboration with Workshop Coffee, serving an accomplished and seasonal eight-course menu entirely sourced from their native region of Scotland.

The Wild Game Co. was founded by Andy Waugh in August 2010, and his unique concept is all about the wild game and venison directly sourced from his family home in the Highlands. The meat is also butchered with care by his father’s game-butchering business just north of Inverness, which has been in existence for over 30 years.

The Wild Game Co. is now one of the Evening Standard’s Top 5 Places to Eat Game in London, the winner of the Young British Foodies Street Food Award 2012-2013, and was a shortlisted finalist for the BBC’s Food and Farming Awards 2012.

The pop-up is appropriately named after Struie Road, one of the most remote places in Britain, and home to some of the best produce available. The Struie is the road that runs south from Andy’s own small village in Scotland, Ardgay, just North of Inverness. All of the meat, fish, cheese and whisky featured in the Struie Road menu will be sourced from the producers in this area.

Workshop Coffee Co. share Andy’s commitment to serving only the finest quality produce, personally sourcing and then roasting their own coffee on their premises in London. Diners at the pop up will enjoy the stylish but relaxed setting, with reclaimed wood, interior vertical garden, exposed brickwork and filament bulbs just some of the design features.

Struie Road will offer a unique seasonal menu with a complimentary innovative cocktail on arrival. Guests can feast on eight delectable courses for only £49 with dishes including: Wild Boar Sausage Roll with Gooseberry Ketchup, Whole Lobster, Highland Beef Ribs, Roe Deer Chateaubriand and Foraged Salads. Polish off the perfect evening with puddings including Rhubarb Mess and Honeycomb and Chocolate.

Andy says of the project:
“We’re delighted to be bringing the North of Scotland to Central London with the launch of the Struie Road concept. Our meat is not just wild or from ‘somewhere’ up North, we can tell you exactly who shot it and where from The Highlands, and we look forward to sharing it with you soon!”
