This October, farmers, fishermen and a series of other independent food producers from The Icelandic Pantry, Iceland’s largest artisanal food fayre, will sell and present their produce at London’s famous Borough Market for the first time.
14 artisan producers, renowned for their unique and innovative approach to food and drink production, will travel from Reykjavik to join Borough’s melting pot of traders selling global as well as British cuisine. Highlights include blueberry-cured lamb, artisan pastries, the world’s only geothermally produced sea salt, an eco-whey drink blended with wild Iceland moss and Arctic thyme.
The country’s different regions and harsh climate are represented with a selection of speciality offerings. Organic lamb fed on angelica to give it a special flavour from West Iceland will be available, along with hot-smoked mackerel from the East and artisan rhubarb brittle from South Iceland.
A selection of traditional Icelandic foods will give further insight into Iceland’s rich history, such as a special flatbread dating from settlement from the 9th century. Others include Skyr, a type of fresh strained cheese unique to Iceland and an integral part of the Icelandic diet, and Kelina, a twisted donut and the country’s oldest named pastry, dating back to the 18th century.
Founder Eirny Sigurðardóttir said: “For the first time, Icelandic farmers are traveling to London to sell their products there. The purpose of the trip is not only to introduce Icelandic food culture and products to Londoners’ , but it’s also a learning experience for us, which will help us grow and improve.”
