SUSHISAMBA transforms into SAMBAZONIA: an Amazonian Rainforest Celebration, with an imaginative menu benefiting charity partner Cool Earth

This Christmas season, SUSHISAMBA will transform into SAMBAZONIA, a magical rainforest full of spirit and surprise. Always pushing culinary and cultural boundaries with unbridled creativity, SUSHISAMBA will honor the beauty and bounty of the Amazonian rainforest in an all-season-long experience unlike any other.

An unexpected holiday expedition, SAMBAZONIA will offer guests an immersive, mystical celebration ignited by music, color and bespoke design from November 1, 2019 to January 2020.

Throughout the course of this special activation, SUSHISAMBA will support long-standing charity partner Cool Earth, and its efforts to help halt rainforest deforestation in the Amazon.

With its transformation into SAMBAZONIA, SUSHISAMBA Chefs John Um and Andreas Bollanos have created a thoughtfully curated menu inspired by their recent visit alongside Cool Earth to the Peruvian Amazon. The menu shines a light on the beauty, and fragility of the Amazon: The ‘Lungs of the Planet,’ and more importantly, how critical our action is to save it. Each creation reflects memories of their travels: from scouring the colorful markets of Lima and Satipo to arduous fishing in the Ene River to making sushi with the Asháninka community. Guests will experience the journey through the Chefs’ imaginative flavors and visual presentations complemented by their personal anecdotes, included as a unique ‘storytelling’ component of the menu. £1 from each dish sold throughout the season will benefit Cool Earth.
“Our trip to the Peruvian Amazon was an incredible and enlightening experience,” says SUSHISAMBA Regional Executive Chef Andreas Bollanos. “Cool Earth gave us a special opportunity to live with the Asháninka community and learn about their way of life and their home, the Amazon. We created the SAMBAZONIA culinary experience to share some of the spirit and soul of this inspiring ‘Wonder of Nature,’ and, more importantly, spark action to save it.”
