Heinz Beck’s Italian restaurant in Rome, La Pergola, has three Michelin stars. In February 2010 he opened Apsley’s at the Lanesborough Hotel, a grand, Venetian-inspired concept at one of the capital’s most expensive hotels. The restaurant was awarded a star in February 2010, just five months after opening.

The signature here is the carbonara fagotelli, which Beck tells us was a favourite of Michelle Obama’s when she dined here. If he hadn’t become a chef he would have liked to become an artist, and the advice he offers to those starting out in the business is “never give up. Cultivate your passion, learn from mistakes and always be very humble.” At home he likes cooking vegetables, with a particular preference for artichokes.
