Tonkotsu soup is the most popular dish on our Muga ramen bar menu. The soup is based on a delicately flavoured stock made from slowly cooking pork bones, vegetables and Japanese dried fish (niboshi). The stocks are prepared separately and combined for a perfect balance of flavour.

A ramen joint that should be on your radar
Located on the edge of Piccadilly Circus, there’s a well-priced menu of ramen, Japanese street food snacks and a drinks list that includes Sapporo and Asahi lagers, the less famous black Asahi Kuronama, sake and shochu.
Among the starters there’s takoyaki, fried dumplings filled with minced octopus which arrive piping hot, and padron peppers generously sprinkled with salt flakes.
The most famous ramen dish on these shores is tonkotsu, made with pork bone broth simmered gently for hours. It’s topped with slices of tender pork belly, kikurage mushrooms, half an egg with a soft yolk and a good dose of chilli which adds a spicy kick that nicely balances out its meaty flavour. The shio ramen is named after the Japanese word for salt, an important component of this broth. There’s more pork belly and egg, bamboo shoots and leek, along with pieces of nori, making it an earthier, more veg-tasting dish than the tonkotsu. The ramen bowls are £9.90, with a choice of thin or thick noodles.
There’s also a good value pre-theatre menu available from 6 till 8pm priced at £13.90 for either ramen or slow cooked pork belly with rice, a side of gyoza, and a drink.
Set over two floors, upstairs seating is at the bar around the kitchen. It’s empty on the Tuesday night we visit, which it really shouldn’t be as it’s excellent value, and delicious.
