Whatever Donald Trump says, climate change is real. Thankfully restaurateurs have been aware of this fact for quite some and have started doing their bit. Dan Barber is the latest chef to turn his hand at creating gourmet meals from food that would otherwise end up in the bin, and the concept is called WastED, set to open on the rooftop at Selfridges until the end of February.
The menu will feature ham from pigs that have been fed exclusively on waste food, bread served with watermelon rinds, cabbage cores, and many other untraditional delights.
