Italian chef Massimo Botura has three Michelin stars at his fine dining Osteria Francescana restaurant in Modena, Italy. He's just opened a restaurant in west London, but rather than be another high end concept the kitchen is staffed by volunteers alongside the chefs, and during the week lunches are served for the homeless. The menu is made up of ingredients delivered by The Felix Project, including food that would otherwise go to waste.
